One way I love it is in potato salad, cutting up the hot potatoes and sprinkling them with cider vinegar before they go into the fridge to cool. Yes, it seems to make a huge difference to the final salad.
Another way is in switchel. My own switchel is probably weaker on the vinegar and stronger on the sweetener than traditional recipes, but I make it the way I like it and it's incredibly refreshing on a hot day and a damned sight easier than lemonade.
I also use it in most salad dressings. I've tried all sorts of vinegars, but cider vinegar is my favorite--a little fruity without being overpowering like raspberry vinegar. I find I can use less sweetener to balance it than I've had to use in wine vinegars.
