Cup of frozen mixed veggies, peas, corn, carrots and green beans. Microwaved for 2 1/2 minutes. Tb spoon of olive oil, a few shakes of parmesan and a tea spoon of chia seeds. Stir up and eat.
Protein drink later.

(18,654 posts)One pot dishes are my specialty. The soup is a mix called Jack and the Bean. I just wash the lentils, add them, water and seasoning mix. A friend told me add two small diced potatoes and a couple diced carrots. Takes 10 mins to do that, then I put it on high and few hours later voila! My other specialty is scalloped potatoes using a little Follow your heart vegan Parmesan to a pretty standard recipe. 🙂

(34,208 posts)salmon cream cheese spread I make. Either on low carb bread on celery sticks. Put some olive oil in it, chopped veggies like onions, cut up olives, liquid smoke, chopped pecans and what ever else I have.
Lived most of my life alone and don't mind cooking and washing dishes. My partner loves that. She cooks about half the time.

(18,654 posts)Yum! Im going to try that with Miyokos vegan salmon cream cheese! Bet it would be good on a sturdy pumpernickel or multigrain cracker! Haha

(34,208 posts)Sitting there eating salmon spread on a multigrain cracker, trying to come up with a new name. Low and behold there it was.
I never buy red meat at he store or bring pork or beef into the house. I will eat and keep deer, lamb and goat. Not much but that's just what I do. I do not eat pork for the same reason I don't eat dog meat.
My diet is mine, if you have your own rules, that's ok with me.
