We're having a farewell for our bishop who is retiring. I'm planning to buy a cake from a vegan bakery. I'd also like to have some vegan finger food. I got some vegan mayo, and I thought I'd use it for cucumber sandwiches. If I can find good tomatoes, I'll do tomato sandwiches. Would peanut butter and celery be too childish? I happen to love it.
What else would you recommend?

(25,054 posts)Whole dates take out the pits pull them in half. Then add a pecan in the center and sprinkle with cinnamon.
Yum ! Tastes a little like pecan pie.

(7,309 posts)If you're making it homemade, just make sure the eggplants are fully, even over cooked. I use this simple recipe. I just throw the eggplant on a cookie sheet in the oven at 400° for a half an hour or so. Until they easily are pierced with a fork. And they look deflated. Then, I just whiz it all up in the food processor. You can top it with some chopped parsley and drizzle it with good olive oil. Some people, not me though, blend a little cumin in it. Like 1/4 tsp. I don't prefer it though. Also, some people like it mashed with some pieces of eggplant. But, I like it buzzed really smooth. Also, I buzz in some olive oil, about 2 tablespoons along with drizzling on top.
INGREDIENTS:
2 large eggplant
0.5 cup tahini
6-8 tablespoons lemon juice
4 garlic cloves
1 teaspoon salt
olive oil for serving.

I use to take wheat thins, add a swoosh of miyoko vegan cream cheese then a drop of hot pepper jelly. Something like this jelly
