(41,239 posts)Garlic bread. I am fortunate. My wife is a whiz in the kitchen and shes her worst critic. Her only critic. Shes been busy three days straight so easy meal tonight.

(138,425 posts)Linguini with chix and broccoli in a great red sauce (from local restaurant, which began in 1950s for pizza.) Sauce available by jar, too. Place is Ledo, in MD.
for Marinara Sauce (The copycat recipe is about 4 quarts of sauce.)
* Approx. 1 / 4-1 / 2 cup light or extra virgin olive oil
* 4 - 28 ounces of canned plum tomatoes in thick puree, or 4 - 28 ounces canned crushed tomatoes
* 1-6 oz. The good tomato puree, such as Contadina
* Approx. 4-6 cloves of fresh garlic, crushed
* 1 medium-large onion, finely chopped very processor or by hand (if you like your sauce smooth, then pulse the onion in the processor until the consistency of applesauce)
* Pepper flakes
* Kosher salt
* Freshly cracked black pepper
Ice cream later.

(12,342 posts)Greek turkey burgers with fixings (tomato, tatziki, onions, lettuce) with potato salad and broccoli. Dessert is "Make your own sundae" (vanilla, coffee, or strawberry ice cream) in chocolate chip cookie cups. Iced tea to drink with dinner.
Before dinner we're having either Skinny Pina Colada or Orange creamscicle with veggies/dip. Skinny pina colada is 2/3rds bottle of Ice Pineapple Coconut sugar free soda, 2-3 shots heavy cream, 3 shots rum, over crushed ice - add coconut or pineapple flavoring if you want those flavors stronger. You can do the same with the Ice Orange SF soda for the creamsicle version - just add a 1/4 tsp vanilla extract.

(39,052 posts)Hadn't thought about Greek--just might do it that way. I had planned on a Martha Stewart recipe that I tried a few weeks ago and was very happy with.
Meant to mention in my OP that Whole Foods has a sale on ice cream and ice cream bars, novelties, etc. The prices are 50% off. I got Yasso bars for $3.50!

(71,712 posts)Butcher shop here sells really good poor boy meat.
I grilled them over charcoal. I put course salt, black pepper, smoked paprika, mustard & onion powder on the meat, pre-cooking.
I put garlic butter on the rolls & toasted them on the grill for about 2 minutes before the meat went on.
Put Colby cheese on them, then tomato & sport pepper ribbons.
Came out really good.
