What's for Dinner, Sun., July 7, 2024

Broccoli and Red Pepper Open-Faced Vegetable and Cheese Sandwich.

I found the recipe in Moosewood Restaurant Cooking for Health, Mollie Katzen.

I'll just mix the broccoli, red peppers garlic, salt, red pepper flakes and rosemary and cook on the stove top until done. Mix with a little leek broth. Then I'll put it over a whole wheat toast on which I've already melted the provolone. Sprinkle with a little grated Parmesan.

Cassava chips on the side. I made dip for them using Fage sour cream, my fave, and worcestershire, mixed Italian dried herbs, and smoked salt. Also added black pepper, freshly ground.

That's it for me, although if I have enough energy I might make a cold cucumber-tarragon salad with the fresh tarragon I picked from my giant plant at the garden.

Key lime kombucha.

Maybe watermelon for dessert.

4. Grilled Chicken

I brined the chicken breast in water, salt, & brown sugar fir a couple hours.
Then, I dried it off, added Italian dressing, let it sit for a half-hour and grilled them.
Made a sauce with sautéed mushrooms (deglazed with Gran Marnier) garlic & cream, with a tbsp of butter.
Made a box wild rice for the starch.
And, boiled Brussel sprouts in salted water with the juice of a lemon to keep them bright green.
Chicken stayed very moist, which is good due to the risk of drying out chicken breast on a grill.

so barbecued some chicken thighs marinated in lime juice/adobo (we were doing a deep cleaning of the fridge) with eggplants, and Sichuan pickles and Korean-ish pickled cucumbers as sides

Leftovers for lunch tomorrow

Yellow squash, baby bella mushrooms, onion, green onion, garlic. I made cucumber kimchi. I got it a little salty, so i put half the yellow squash in. Fixed the saltiness, added an interesting texture.

I have leftovers for today
