This is a basic version designed to use up leftover taco shells on a lazy day. Bake three shells and scramble four eggs. Fold in some shredded Mexican cheese (Monterey jack, cheddar, queso quesadilla, and asadero). You can add the cheese on top if you don't want it melted like that. Fill the shells with the scrambled eggs and add salsa on top. It's very simple and I'm surprised that I've only discovered it now. Refried beans or maybe Mexican rice might make for a nice, heartier addition.

(2,317 posts)I like to go with potatoes in lieu of rice, seasoned up with salt, pepper, garlic powder, maybe some smoked paprika to give off a bacon viibe. Hash browns, tater tots, leftover baked potatoes fried to crisp up a little, I've been known to use leftover French fries. And cook up bell pepper, onion, and whatever needs to be used up - the last couple mushrooms, a chunk of zucchini, leftover broccoli, maybe throw cumin and oregano in, and scramble eggs with that. Tortillas, cheese, salsa, I'm happy. Of course that's maybe more work than you have time for some mornings, but not too bad working with leftovers
