What's for Dinner, Mon., Nov. 11, 2024

Brown sugar glazed salmon. Couscous with minced herbs and garlic.

Sweet & spicy Brussels sprouts. They have soy sauce, honey, chili garlic paste, hoisin sauce, and sesame oil drizzled over them. These are the fresh ones off the branch that I found at Trader Joe's.

Dessert: I went out last night for chocolate ice cream, wanting Rocky Road. But they didn't have it so I had to buy a chocolate/marshmallow mixture to which I added chopped pecans. Turned out very good! So good I had two cups of it which is why I'll be having blackberries and Greek yogurt tonight with tea for dessert.

great desserts not available close enough, so 'just' some kinda ice cream, maybe b & J's coffee coffee buzz buzz buzz.

4. Spicy Green Beans and Crispy Tofu

Steam-stir in evoo and veggie broth: cut string beans, chopped orange bell pepper, onions, and garlic. Add sliced white mushrooms and hot pepper flakes. Toss with air fried crispy tofu cubes and cooked chickpea penne. Add a small amount of Miyoko’s “butter” to add richness. Fresh chopped parsley and vegan Parmesan on top. Iced Earl Grey tea with lemon.

I went to the supermarket today, and the pork roasts were on sale at a price too good to pass up.

Tonight I am making her home made egg noodles and chicken broth. She’s pretty excited says hasn’t had that since left home decades ago.

I used a roasted chkn carcass for the broth and meat. Egg noodles are actually very easy.
