What's for Dinner, Thurs., Nov. 21, 2024

Pork Bulgogi wrapped in Red Lettuce Leaves.
Martha Stewart recipe.

Thinly sliced Persian cucumbers, just sprinkled with Malden salt. A few thin slices of onion.

It's cold and rainy here (yay rain!). I'll probably drink peppermint tea for the rest of the evening.

It’s dreary and cold here today and we had our first snow of the year, so …. time to make the comfort food.

Also tossed green salad and garlic bread.

Made a nice linguine with shrimp & an onion, garlic, mushrooms, butter, cream & white wine sauce.
Today, we went something that took less effort.

Steam-fry in evoo and veggie broth: chopped celery, orange bell pepper, onions and garlic. When almost done, add a little more broth and a few cups of fresh cut-off-the-cob sweet corn (cooked frozen also works) and steam the corn along with the veggies until done. Add a can of drained butter beans and a few dollops of butter and stir. Salt and pepper to taste. Served over organic quinoa. Iced green tea with lemon. Cheers! 🥂
