Cabbage Roll Casserole

Prep Time: 20 mins
Cook Time: 1 hr 20 mins
Total Time: 1 hr 40 mins
Servings: 12
Yield: 1 9x13-inch caserole
Ingredients
1X 2X 4X
Original recipe (1X) yields 12 servings
2 pounds ground beef
3 ½ pounds chopped cabbage
1 (29 ounce) can tomato sauce
1 cup chopped onion
1 cup uncooked white rice
1 teaspoon salt
2 (14 ounce) cans beef broth
Directions
Step 1
Preheat the oven to 350 degrees F (175 degrees C) and gather all ingredients.
Step 2
Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
Step 3
Combine cabbage, tomato sauce, onion, rice, and salt in a large mixing bowl. Stir in cooked ground beef. Pour mixture into a 9x13-inch baking dish, then pour beef broth over top.
Step 4
Cover and bake in the preheated oven for 1 hour
Step 5
Stir, re-cover, and bake until cabbage is tender and rice is done, 20 to 30 minutes more.
Step 6
Serve hot and enjoy!

Note
You may need a smaller baking dish in addition to the 9x13-inch dish. If so, divide broth as needed between the dishes.

If you prefer more flavor, consider adding crushed garlic, paprika, thyme, or cayenne pepper.

I love to cook and I freeze portions for one of a variety of things. Saves money in the long run, too.

Mother used to make cabbage rolls. So this is a happy memory comfort food for me.

I've been thinking of getting a small chest freezer & doing the same thing.

I also share your sentiment for stuffed cabbage rolls as they were a childhood fav for me as well.

These days, I make it as stuffed cabbage soup. Just throw it all in a dutch oven pot & wa-la. Lol

How is sweet little Chichi doing?

I make mine as stuffed cabbage soup these days. Just throw it all in a pot together & there you have it. For a lg dutch oven pot, I add 1 28 oz can crushed tomatoes & 1 qt beef broth or chicken broth.

I've had a taste for this lately & have been planning a pot for after the turkey is gone.

I like Pants' idea of freezing some as well, but you can also just make a smaller amount.

I'm a meat & potatoes with a large salad person myself.

Trying to talk myself out of getting up & squeezing another small meal into my day... 🤔

I've been eating breakfast earlier these days to take meds...but 3am here is a bit much.

Yet, I'm not sure I can justify crawling out from under toasty warm sherpa blanket.

Surely not as good as yours, but it will do.

and ham/cheese/croissant, but ham's WAY too salty, and croissant nowhere NEAR french!

ALSO got ginger/teriyaki salmon salad w toms + avocado, but toms rarely taste good. OH DAD, where are you!!!

Treating myself, as I'll be home alone next days. IF lucky, will briefly see daughter some time.

Oh, I miss my dad with his huge beefsteak tomatoes, too. They won't even grow here.

Your menu sounds fabulous!! I do love to put red, black, and garbanzo beans in my chili, too. And lots of red, yellow, green, and orange bell peppers.

No turkey for Thanksgiving for you? (I used to just go to the deli & buy a couple of really thick slices of Butterball turkey, then nuke a sweet potato and make a salad when I was completely alone for the holiday. Worked for me.)

MD family (who visited briefly today!) is heading to a lake rental cottage early morning.



Will likely have leftover salmon salad AND ham/cheese/croissant. AND a BIT of chili tomorrow.

and ICE CREAM!
