Just got my dish started.

I’m making potatoes au gratin. My recipe.

Warning. Not a measurement person so no amounts. Also not recommended for anyone who even attempts to eat healthy.

Potatoes sliced of course.
Make a mixture of
Heavy cream
Bacon bits I’ve also used cubed up ham.
Chives
And grated smoked Gouda or smoked gruyere cheese.

Drop in potatoes to hand mix it with the mixture. Keep some for putting over the top after all the potatoes and mix is put in the pan. Cover with aluminum foil for baking. I don’t lay the potatoes flat but stack them vertically in rows so every potato gets some browning. I remove the aluminum foil set to broil for browning the top.

To keep the kitchen clear thanksgiving day I almost finish them the day before. That way I just have to heat up and brown.

I made this first years ago and now a week or two before thanksgiving or Christmas I get the are you going to make it again.

2. There was a time I'd get up on Thanksgiving morning and do everything. Nothing was done ahead.

I physically can’t do that any longer. So early this afternoon I did the dressing and most of the green bean casserole (I’ll add the french fried onions in the morning before they go in the oven). I’m just about to do the mashed potatoes. Tomorrow I’ll just need to put the turkey and ham in the oven, and wait till it’s time for the finishing frenzy.

3. I made my sweet potatoes today (with pecans) and brought the turkey up from the downstairs fridge-17 lb.

Made the stuffing tonight so it’s ready to go at 6 am tomorrow. Cleaned the whole house. I’m pooped.
