What's for Dinner, Wed., June 24, 2026

Zucchini mint feta cheese salad. Homemade vinaigrette.

Lemon garlic shrimp pasta. Julienned basil leaves on top.

Kombucha: Blueberry.

Dessert: Low-sugar vanilla ice cream with fresh blueberries that I make into a sauce.

~ Yesterday’s homemade mushroom soup

~ Grilled pepper jack cheese sandwich on pumpernickel bread

~ Leftover green salad with homemade yogurt/lemon/dill dressing

~ Watermelon cubes

~ Lemon water

~ Later….ice cream cone in a nearby village if my bad habits overtake me

5. Black Bean Soup

Soaked beans overnight and cooked separately from the veggies. Sweated in evoo: chopped onion, red and green, jalapeño peppers, and minced garlic. I added them to the beans and simmered until beans were cooked. I added steamed sweet corn as the final stage. Seasoned with toasted and ground cumin seeds, smoked paprika and small amount of cilantro. Corn muffins from a bakery to accompany. Cheers!🥂

I've tried off and on for a few years to get a black bean recipe just right... and have yet to achieve it! I salute you!

I used to blend the soup into a puree but we like it better without doing that. I cook the beans in a 50/50 mixture of water and veggie broth. It’s important to soak the beans overnight or they will take forever to get soft.

... but then instead of raspberry-walnut vinaigrette, I found I had a bottle of Makoto ginger dressing (very ginger-y for the uninitiated). Mixed greens, carrots, celery, a few olives, and I cubed up some (vegan) turkey to make it a meal.

Of course, by the time I added that many "one more things," it fills a dinner plate and will take an hour to work my way through it. 🤪
