When milk is on the brink, I make Paneer cheese. Usually with some chives. Crock pot yogurt is my other, must have

That's a really easy one. I've been trying to work out a good saag paneer recipe but when I have a lot of milk my spinach has played out.
Last year I tried growing this "malabar spinach" which is sort of a climbing asian green. It loves heat and would be a good substitute for the spinach in saag paneer.
Although technically I guess saag is greens not spinach.

That is why I make it. I do a lot of cooking and baking but like to keep it simple now, because my business can be an energy drain.
The only time consuming thing I do in the kitchen, is Tamales. They freeze beautifully and my family loves them
