All time tailgate favorites !

Time to start planning to eat some good grub, drink good beers and watch Super Bowl LV.

I’ve only tailgated twice but the second was my best.
Both were Chiefs games in KC. First time I did brats and slaw and chips. Was just me and the ex. Chiefs won!

Second time, I had received three front row tix for Christmas. We went the day after. I did grilled tilapia fish tacos. Everything was prepped or ready before at home. Grilled the fish and tortillas on the tailgate portable gas bbq. Had mango salsa and chips and margaritas! Also a thermos of hot chocolate for my teenage son. Good memories. Chiefs won!

What’s your favorite for me to steal for Super Bowl LV?? (@ home)

Potato nachos Sunday for brunch and the Championship games.

Boiled small potatoes. Cool. Cut in half and smash with hand. Move to sheet and repeat. I seasoned the potatoes well with chili and cumin and 🧅 powder etc. prebaked them and then broiled golden brown before adding toppings.

These were fantastic! Loaded high with toppings too.

I make a cornbread batter with creamed corn, jalapenos and grated cheddar fry them all up and then make a few sauces.

mustard based;

1/4 cup honey, 1/4 cup mayonnaise, 1/4 cup Dijon Mustard, 1 small chopped jalapeno pepper or crushed red pepper flakes, 1 tsp distilled vinegar.

Standard bbq sauce. I use a sugar free brand and dress it up a bit with red pepper flakes and a little mayo

Sweet Chili Sauce...straight from the bottle.

I also make loaded nachos and I just placed my order yesterday for the whole brisket.

I have had in KC. Super good!

I might try those mini corn dogs. Love all the flavors!
Have made the little sausages wrapped in crescent roll dough but not corn dogs. Mmmmm.

The corn dogs are surprisingly good and I HAVE to make them as people ask for them! They are bite sized and go great with beer.

(hint) I do sprinkle a tiny smidge of cayenne on the dogs when they come out of the grease for a little extra kick...man, does the beer flow...lol.

I am in Texas after all...

Uh huh!

I can almost taste it!

Issaaquah WA has a KC BBQ joint. I rolled in there and got brisket and creamed corn last weekend. Got my fix for a bit.

Also, pudding shots. Chocolate pudding with CraterLake hazelnut espresso vodka.

Around 10 am will make Bloody Mary with bacon vodka!

11. Oh, and I just picked up my brisket. A local group of bbq guys do it up big and they cook all night

So their briskets are well known around here for being some of the best.

I got to tell you...the juices...holy moly, This brisket is thing of beauty.

Almost a crime to chop up a couple pounds of it for the Nachos, but you gotta do what you gotta do!

Oven-based "fried" chicken wings -- buffalo or any other style you prefer. About as crispy as fried, but without frying (which is a pain in the ass to do properly in a home kitchen).

Google "chicken wings" and "baking powder" -- which is the key to the method (aluminum-free baking powder, that is). And then pick a recipe with a flavor profile you favor -- spicy, sweet, garlicky, peppery, whatever.

My mom’s meatballs, spinach artichoke dip with chips, cheese and sausage, Vegs and dip....super bowl is for munching, right? Oh, and some “edibles” for the final touch!
