Ain't nothin betta than a big steaming bowl of homemade baked beans for breakfast, lunch or suppa on a cold winter day.
My Antarctica recipe (I made this at Palmer Station on Sundays. The cooks didn't work Sundays so we had to make do...The Station Manager wouldn't let me leave without giving him the recipe.)
It's pretty much standard except for the dry mustard - it's what gives it that special tang.
I bag yellow-eyed beans.
Bigass piece of salt pork - you can use a chunk of beef marinaded with salt overnight or neutral vegetable oil and salt for veggie....
One large onion peeled, whole
1/3 cup brown sugar
1/3 cup molasses (light or dark)
4 teaspoons dry mustard - important - gives it tang but doesn't make it taste "mustardy"
I literally had to guard it with stew ladle to keep the bean vultures away - and make bowls for folks who couldn't get away from work.
I'd get on the "All Call" and announce "Beans are ready"...
