What's for dinner on a dreary, cool, raw Michigan day? [View all]

The first soup made with all our harvested veggies!

A light went off in my head this morning, after checking the fuses, I set about making dinner.
Trip to the freezer to grab some of the grilled chicken bones left over from previous meals throw into the InstaPot with the trinity of veggies for broth. When finished to the soup pot to wait for the addition of the veggies.

Incorporating white onions, carrots, watermelon radish, snow peas, green beans, spinach and for fun and pepper flavor a couple poblano peppers. Still got to add some garlic, I usually wait till closer to the meal to add it. It keeps a little more intense flavor, IMO, at that time, we love garlic. Then I’ll grill up a few little chicken pieces to add before serving.

Many more soups to come but the first of the year is always special.
