What's for Dinner, Thurs., July 18, 2024 [View all]

It's clean out the refrigerator day, but I have fun with figuring out to do with little bits and pieces.

So no real meal tonight, just whatever I find that looks good and that if gone, frees up space.

So far I've made:

Tossed green salad with cucumber, scallion, tangerines, cashews, & balsamic dressing. The balsamic dressing really pairs well with fruit.

Then I made round wheat crackers and cream cheese and on the top were thin slices of radishes and cucumber. Chopped chives, salt and freshly ground pepper over the top.

Next up will be small sweet peppers, sliced, and inside Muenster cheese. They go in the air fryer and have a nice brown to the pepper and cheese melts. So good!

I have half a Savoy cabbage, so I'm thinking to saute it with onion and fennel seed. Have a few sliced pork patties with it. I like to chop the cabbage with my spiralizer. Works really great.

Cherry kombucha.

Dessert: cantaloupe with no-sugar ice cream and chopped mint.
